Beat The Winter Blues - My Favorite Findes

Hi, Domestic Deadline readers!  My name is Carrie, and I blog over at My Favorite Finds.  I blog about food, crafts, organizing, and parenting.  I have found my "inner crafter", and I enjoy sharing my ideas on my blog.  

Emily guest posted for me during my Blog Birthday Bash in December.  She gave my readers {and ME} some easy ideas for organizing your coat closet.    It inspired me to start getting into the small closets of our home and organizing them.  It's a job, but so worth it!  

I'm excited to be here today as part of her Beat The Winter Blues series.  Every week, I host Must Try Mondays, a weekly link party where you can share your favorite recipes.  As part of Emily's series, we decided to co host Must Try Mondays.

Do you love eating cookie dough?  Or need a little something sweet in between meals or late afternoon?  

Or any time for that matter?  My answer is YES to all of those questions.  

But....eating cookie dough isn't exactly healthy, and chocolate bars and cookies between meals add more to my waistline.

Until now.  I had pinned these, and was wanting to make them.  I finally got around to it, and I am so addicted!  I don't feel at all guilty eating a few at a time.  They're very filling, and satisfy  my sweet tooth and that "treat" of cookie dough feeling.

Energy Bites {adapted from Food Doodles }

Ingredients:
*2/3 cup smooth peanut butter
*1/3 cup honey
*1 cup rolled oats
*1 cup ground nuts or crushed graham crackers
*2 teaspoons vanilla
*1/2 cup chocolate chips
*1-2 teaspoons cinnamon

Directions:
1.  In a mixer, fitted with the paddle attachment, mix the peanut butter, honey, and vanilla until well combined.

2.  Add the oats, ground nuts, chocolate chips, and cinnamon.  Mix well.

3.  Refrigerate for 30 minutes.  

4.  Roll into balls and place in a mini muffin tin or on a cookie sheet lined with parchment paper.



5.  Place in freezer for 90 minutes, or until solid.  Remove from muffin tin or cookie sheet into a sealed container.  Store in the freezer.

When I leave for work, I throw a few in a snack size bag, and by lunch they've softened and are my dessert.  They are also REALLY good right from the freezer.
